Secrets from the Chef at Mahi Mah's

Located inside the Ramada Virginia Beach Oceanfront hotel is award-winning boardwalk restaurant, Mahi Mah's Seafood and Sushi Saloon. While they serve breakfast, lunch and dinner; and are the ideal location to enjoy live music from Summer at Seventh free concert series, Mahi Mah's is best known for its delicious variety of sushi and sashimi. Because we understand many of our valued hotel guests aren't able to visit as frequently as preferred, we thought we'd give you the Mahi Mah's experience to try in the comfort of your own home. 

How to Roll Your Own Sushi: Tekebi Roll

Total Time Required (rice cooking, prep and rolling): 1 Hour
What you'll need:

  • Bamboo Mat
  • Saran Wrap
  • Parchment Paper
  • Sharp Sashimi Knife (or Sharp Chef's Knife)
  • Seaweed Sheets (these can be purchased at your local Asian market)
  • Bowl of Ice Water
  • Rice
  • Shrimp Tempura
  • Avocado
  • Tuna (sliced)
  • Caviar
  • Scallions
  • Hot Sesame Oil
  • Eel Sauce

Getting Started: 

Cook Time: 25-30 minutes
Water to Rice Ratio: No matter the amount of rice cooked, water added should just barely cover the top of the rice. For stickier rice, add less water.
Sweet Vinegar: Immediately after the rice is cooked, mix in sweet vinegar (For every 1 cup of rice, add 2 Tbsp of sweet vinegar). Set aside and wait for the rice to cool to room temperature.

Bamboo Mat: 
To create a slicker surface for the rice to slide out of, and to avoid rice ingraining itself in the indents of the mat, wrap the mat fully in saran wrap.

Cut thin slices and set aside

Let's Roll!

Lay out your seaweed sheet on the saran wrap-covered bamboo mat. Dip your hands in the ice water (this will make handling the rice easier). Very sparingly, begin to layer your room-temperature rice onto the seaweed. *The biggest mistake made when preparing sushi as a first-timer is adding too much rice to the roll. To ensure you don't make this same mistake, cover the seaweed only slightly - just enough to cover the green in the roll.

Once you've completed this, flip over the sheet so the rice is under the seaweed. Place your shrimp tempura in the middle of the seaweed sheet. Place two thin slices of avocado directly above the tempura. 

Lifting the whole bamboo mat up, carefully begin to roll your sushi (note in the image below, the bamboo mat lifts up and over the full roll - careful not to roll the mat into your sushi). The saran wrap should make an easy surface so the rice doesn't stick to the mat. 

Continue to roll the mat until your ingredients are tightly rolled and eventually separated entirely from the mat. Add your thinly sliced tuna across the top of your sushi roll. Note the tuna lays diagonally across the top. Once the tuna is added, lay a sheet of parchment paper on top of the full roll. This will keep your roll intact as you begin to slice through.  Dip your knife in the bowl of ice water (also to avoid rice sticking to the knife). 

Once you carefully lift the parchment paper from your roll, begin to carefully place the roll on the dish you intend to serve the sushi on. Place at an angle so your guests are able to see the colorful artistry of your dish. 

Generously add the Hot Sesame Oil and Eel Sauce across the top of your roll. 

Spoon out the caviar on top of the sauces to add color and texture to the roll. Garnish with scallions on top.

Sprinkle some sesame seeds and add a bit of ginger to the plate for some extra kick.
